Here is a fun curry recipe that I have come up with. Feel free to play around with the ingredients and make it your own.

Curry with tofu and mushrooms
Tofu
Mushrooms
Can
of black olives
Sun dried tomatoes
Onion- chopped
Chopped greens - spinach/ moringa
Can of coconut milk
2 Tbls of
flour
2-3 Tbls of curry seasoning
Fish sauce 1-2 tsp
There
really is no right or exact to this recipe as I just throw everything
together.
I chop up the onion and saute it in a pan with a little water.
If I add mushrooms I will add the mushrooms with the onions.
While they are cooking, I cut up the olives and dried tomatoes then toss in pan along with the tofu and any greens I want.
Then I add my milk flour, curry, and fish sauce.
You could use any milk you like.
I mix it all up until it is thick and hot.
I like eating it over some rice. Tastes great on a bagel.
You
can take out anything you don't want like the tofu, mushrooms, or greens and
add chicken.
