Kitchen Tyme

We spend a lot of thyme in the kitchen. There is always something going on in the kitchen. We are baking bread. We are making kimchi, we are canning beans, we are food preping. We really prefer to make our own food and really have come to enjoy and value the taste of the food we make and the way it makes us feel. We hope to share healthy ideas and recipes with you to help you enjoy your kitchen thyme as much as we do ours.

Curry with tofu

Here is a fun curry recipe that I have come up with.   Feel free to play around with the ingredients and make it your own.

Curry with tofu and mushrooms

Tofu
Mushrooms
Can of black olives
Sun dried tomatoes
Onion- chopped 

Chopped greens - spinach/ moringa
Can of coconut milk
2 Tbls of flour
2-3 Tbls of curry seasoning
Fish sauce 1-2 tsp

There really is no right or exact to this recipe as I just throw everything together. 

I chop up the onion and saute it in a pan with a little water. 

If I add mushrooms I will add the mushrooms with the onions.  

While they are cooking, I cut up the olives and dried tomatoes then toss in pan along with the tofu and any greens I want.  

Then I add my milk flour, curry, and fish sauce. 

You could use any milk you like.

I mix it all up until it is thick and hot.

I like eating it over some rice.  Tastes great on a bagel.

You can take out anything you don't want like the tofu, mushrooms, or greens and add chicken.

Making Walnut Nut Butter

Today we are making walnut nut butter.   This is super easy and fast to make.   

Open a bag of walnuts.


 

Roast on a pancake grill. Just spread them out and mix them around until you smell them roasting and then take them off.  I put them on about 400. You could also do this on the stove top and put them in the oven.



Add to food processor. 



Start blending. The walnuts will first turn powder like and you might need to scrape the sides down a few times.  


 

After a few minutes it will turn into a creamy paste. 


 

End result. Beautiful Walnut Butter.

Soy Milk

How I make our Soy milk.






  • Soak 1 cup soy beans until double in size – I usually just do it overnight. This should give you about 2 cups. The end result is about 1 cup beans to 4 cups water. 
  • Rinse beans – then add to blender and add about 2 cups water. Blend
  • Strain liquid through mesh cloth – squeeze mesh cloth to get all the liquid. 
  • Discard pulp. 
  • Add Milk to pot- add about 2 cups more water. I just put my strainer on top of the pot so the milk ends up in the pot I am cooking it in.
  • Cook soy milk in insta pot for 10 min on med heat. If using stove I would bring to boil then simmer about 20 min 
  • Let cool 
  • Add to half gallon jar (8 cup) fill remainder of jar with water. 
  • Keep in fridge. 
  • Feel free to play with ratios of water to milk. If you want thicker milk use more beans to your water ratio. 
  •  Enjoy!

    Coffee Creamer

    I love Coffee. I love the smell of it. I love the taste of it. I love adding creamer to my coffee. What I don't love is the ingredenients in the creamer that I buy from the store and the price. So my mission has been to find a creamer I can make that I love. We are feeling pretty happy with this creamer recipe.

    1 cup cashews (soak these over night or for about an hour in hot water)

    Drain cashews

    Add cashews to blender

    Add 1 1/2 - 2 cups water or choice of milk ( I have been liking 1 1/2 cups and I use my home made soy milk)

    Blend until smooth

    Thats it!!!! Your creamer is ready. Add sugar and anything eles you see fit.

    Mandrain Oranges

    We where blessed with several pounds of mandarin oranges so we did some canning.

    Peel mandarins.
    Fill jars to rim with mandarins.
    Cover with a light syrup.
    I used 1 1/2 cups sugar to 10 cups water.
    Bring your syrup to a boil then mix well.
    Pour over your mandarins in the jar filling them to the shoulder.
    Put your lids on and water bath for 10 minutes.
    Let cool and store.

    Fermented Okra

    Cut up the Okra 

    Place in Jar 

    Cover with Brine 

    Let sit for 4-7 days
